The past couple of months I've been using a powdered milk product called Morning Moo. I live alone, so I only buy milk 1/2 gallon at a time, but I was still throwing away spoiled milk often. I heard about this product before, so I decided to try it. It was about $10 for a gallon can of the powdered mix, 68 8 oz servings. I figure that's about $0.15 a serving. I was spending about $0.25 a serving on regular milk and usually throwing out 1-2 servings anyhow.
As far as taste goes, it tastes like skim milk to me. According to the directions you can make it thicker, but I usually drink skim anyhow.
The downside is you do have to spend some time getting it ready. It takes maybe 5 minutes though. You ad hot water to the mix, whisk it, then add the rest of the water. I don't mind the extra work. I haven't wasted any due to spoilage yet. I just make more as I need it.
I did try and make pudding, and it stayed a little runny. I haven't baked or cooked anything else with it yet.

My contribution/tip. We are on a pretty tight budget for our family. Whenever chicken or ground beef are on sale for a great price, i buy TONS! i cook most of it up. (i usually cube and brown the chicken). then freeze it in baggies in the amounts i would use for stir fry or spaghetti or whatever. i haven't paid regular full price for meat in about 2 years and haven't ever had to make a meal meatless out of necessity cuz we ran out. and...FYI. you can freeze milk. don't keep it frozen for more than about 3-4 weeks though. thaw it completely, and shake well. i can't tell the difference. (haven't paid full price for milk in over a year either)
